Laurent Chancholle is from a farming family that has its roots in Gascony. He has developed a real love for the land, regional produce, and human values.
From an early age he was passionate about biology, studying biochemistry at university before obtaining the National Enology Diploma. This gave meaning and a finality to this knowledge, allowing him to be part of the creation of a noble product.
His curiosity and thirst for knowledge about the wine industry led him to travel the world as part of his Master of Science with the OIV (International Organisation of the Vine and Wine).
After earning his stripes in the winery, he worked for 12 years for a renowned enological laboratory in Bordeaux in various roles: following field trials, managing the analytical laboratory, estate consultancy, management of innovation and R&D. As the Technical Director at Lamothe-Abiet (Laffort Group), he continued to develop his winemaking expertise, both in scientific and practical terms, with the wide range of situations this role presented.
Working in close contact with winemakers and consultants, he has helped them to understand and implement numerous winemaking techniques in all of the world’s viticultural regions. This diverse experience, and his desire to keep going further, gave him a holistic vision and understanding of winemaking processes. He prioritises prophylactic enology, which involves limiting inputs and maintaining precision and purity in the wines’ quality. In particular, over the past few years he has worked on reducing sulfites, with rigorous consideration of microbiology management and the role of oxygen.
In 2019, he decided to create his own consulting business, wishing to dedicate his knowledge and energy directly to helping winemakers.
